Grilled Tropical Sweet Heat Chicken Skewers

Ingredients:

2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
1 cup Hot Diggity Pepper Company’s tropical sweet heat sauce
1 pineapple, peeled, cored, and cut into 1-inch pieces
2 large bell peppers, any color, cut into 1-inch pieces
1 large red onion, cut into 1-inch pieces
Salt and pepper to taste
Lime wedges and fresh cilantro, for garnish


Marinade:

1/2 cup Hot Diggity Pepper Company’s tropical sweet heat sauce
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper to taste
Instructions:

In a bowl, mix together all the marinade ingredients until well combined. Add the chicken pieces and mix well to ensure they’re fully coated. Let the chicken marinate in the fridge for at least 30 minutes, but ideally up to 2 hours.

Preheat your grill to medium heat.

While the chicken is marinating, prepare your vegetables (pineapple, bell peppers, and onion).

Thread the marinated chicken pieces onto skewers, alternating with pieces of pineapple, bell pepper, and onion. Sprinkle with salt and pepper to taste.

Grill the skewers for about 15-20 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and charred.

During the last few minutes of grilling, baste the skewers with the tropical sweet heat sauce from Hot Diggity Pepper Company. Turn the skewers to ensure they get coated and caramelized on all sides.

Remove from grill and let rest for a few minutes before serving.

Drizzle with a bit more tropical sweet heat sauce if desired, and serve with lime wedges and a sprinkle of fresh cilantro.
