Mango Habanero Glazed Salmon

Ingredients:

4 salmon fillets (about 6 ounces each)
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup Hot Diggity Pepper Company’s Mango Habanero Pepper Jam
2 tablespoons soy sauce
Juice of 1 lime
2 cloves of garlic, minced
Fresh cilantro and lime wedges, for garnish

Instructions:

Season the salmon fillets with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for about 4-5 minutes or until the skin is crispy.

While the salmon is cooking, in a small saucepan over medium heat, combine the Mango Habanero Pepper Jam, soy sauce, lime juice, and minced garlic. Stir until the jam has melted and the ingredients are well combined, then reduce heat to low.

Flip the salmon fillets and cook for another 2-3 minutes, or until they reach your desired level of doneness.

Spoon the Mango Habanero glaze over the salmon fillets, making sure to coat them evenly.

Remove from heat and let the salmon rest for a few minutes, allowing the glaze to thicken a bit more on the warm salmon.

Serve the salmon fillets garnished with fresh cilantro and lime wedges on the side.

This dish would be wonderful served with a side of coconut jasmine rice and a fresh mango salsa or salad. Enjoy the combination of sweet, spicy, and tangy flavors!
