Tropical Sweet Heat Shrimp Skewers

Ingredients:

1.5 lbs of large shrimp, peeled and deveined
1 cup Hot Diggity Pepper Company’s tropical sweet heat sauce
2 cloves of garlic, minced
1 tablespoon fresh ginger, grated
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper to taste
Fresh cilantro and lime wedges, for garnish

Instructions:

In a bowl, mix together 1/2 cup of the tropical sweet heat sauce, minced garlic, grated ginger, lime juice, and olive oil.

Add the shrimp to the marinade, ensuring they are well-coated. Let them marinate in the refrigerator for 15-30 minutes. Don’t marinate for too long as the acid from the lime juice can start to cook the shrimp.

Preheat your grill to medium-high heat. If you’re using wooden skewers, soak them in water for at least 30 minutes prior to prevent them from burning on the grill.

Thread the marinated shrimp onto skewers.

Grill the shrimp for about 2-3 minutes on each side, or until they are pink and opaque. In the last minute of grilling, baste the shrimp with the remaining tropical sweet heat sauce for extra flavor and glaze.

Remove the shrimp from the grill and season with a little extra salt and pepper, if needed.

Serve the shrimp skewers garnished with fresh cilantro and lime wedges on the side.

These shrimp skewers would pair perfectly with some coconut rice and grilled vegetables for a tropical-inspired meal!
